Less oil
Wok-cooked Thai stir-fries are so healthy because very little oil is used in the cooking.
A little oil is added at the beginning to soften the garlic and then the heat goes up and it's over to the broth.
You'll often see a big pot of broth next to the chef in Thai kitchens to use throughout stir-frying to ensure the dish never gets too dry.
Vegetable oils contain very large amounts of biologically active fats called Omega 6 polyunsaturated fatty acids, which are harmful in excess.
This does NOT apply to healthy plant oils like olive oil or coconut oil, which are extremely good for you.
There is evidence from both randomized controlled trials and observational studies that vegetable oils can increase the risk of cardiovascular disease.
